Could we have our wedding on Sunday, after all of the regular Sunday Masses are done?

Yes, with the permission of the pastor. Marriage has a special wedding Mass associated with it with special readings and white vestments. In Masses which are not parish Masses, the wedding Mass may be used without change. (Rite of Marriage #11)
